When food raw materials are steamed, starch undergoes gelatinization. At this time, hydrogen bonds between starch molecules are broken, and water enters the microcrystalline gaps of starch. Due to the action of high-temperature steam and high-speed stirring, starch quickly and irreversibly absorbs a large amount of water. After further cooling treatment, the starch undergoes retrogradation, and the starch particles are highly latticed, enveloping the water absorbed during gelatinization. During high-temperature treatment (frying or sand frying), water in starch microcrystals rapidly vaporizes and sprays out, promoting the formation of porous structures to achieve swelling.
