Artificial rice, also known as fortified rice or reconstituted rice, is primarily produced using twin-screw extrusion technology. The process begins by blending rice flour, broken rice grains, or multigrain powders with water and essential nutrients such as vitamins and minerals. The mixture is then fed into a twin-screw extruder, where it undergoes high temperature and pressure, combined with intense shearing forces. This causes the starch to gelatinize and the ingredients to fuse into a uniform dough-like mass. The extruded material is forced through a die with specially shaped holes, forming rice-shaped kernels that are cut to precise lengths. Finally, the kernels are dried and cooled to achieve the desired texture and shelf stability.
